Sausage & Broccoli Rabe
2 packages of Thumann's sweet and/or hot Italian sausage (each package contains 5 links)
3 tbsp of Extra-Virgin Olive Oil
4 large fresh cloves of garlic mashed
1 1/4 lbs. fresh broccoli rabe, cut into 1 1/2 inch pieces.
1/3 cup water
salt and pepper to taste
Rinse broccoli rabe. Dry well. Remove about 1-1 1/2 inches off stalk ends. Peel back dark green skin. Chop into 1 inch pieces.
Heat olive oil in a large skillet over medium heat. Add Thumann's sausages and garlic. Cook until sausage is golden brown, stirring frequently. Do not burn garlic; it will taste bitter.
Add broccoli rabe and water to the skillet with the sausage. Season with salt and pepper to taste. Cover the pan, let it simmer until broccoli rabe is tender, about 10 minutes. Serve with firm Italian bread or makes a great sandwich. Enjoy!
