Chicken or Beef Fajitas
1 lb. of Thumann's Roast Beef or Thumann's Chicken Breast, cut 1/4 inch thick pieces at the deli, then
cut into strips
2 yellow onions, cut in half,then sliced
2 garlic cloves, minced
2 bell peppers, one red and one green seeded and cut into strips
2 Jalapeño peppers, seeded and cut into rings
4 tbsp of Extra Virgin Olive Oil
salt and ground Pepper
1 tbsp of freshly chopped Cilantro
6 flour tortillas, slightly warmed
Salsa, Sour Cream, Cheddar Cheese, and Guacamole (or avocados) on side for serving.
Use a large frying pan, heat up 2 Tbs of olive oil and sauté the onions, pepper, and jalapeño peppers over medium heat and stir often. Cook the vegetables until very tender.
About 12-15 minutes. Add remaining olive oil, minced garlic, cilantro, salt and pepper to taste; followed by Thumann's Chicken Breast or Thumann's Roast Beef. Sauté for 5 minutes longer to blend the flavors. When finished, place some of the meat and veggies on a tortilla with some salsa, sour cream, guacamole, or avocados on the tortilla. Roll it up and Enjoy!
