What is MSG?

Monosodium Glutamate (MSG), is a flavor enhancer used to improve the flavor of food products. Some research has shown that MSG afflicts many people with a multitude of side effects. Some manufacturers use lesser quality meats and must use MSG to enhance their products in an effort to compete with Thumann's quality and natural flavors. Thumann's products have never used MSG and never will! The quality and taste of our deli-meats stands head and shoulders above the rest. What is gluten?

Gluten is a stored protein found in all grains. This storage of proteins is known to cause damage to the small intestine of people with gluten-sensitive diseases namely, Celiac Disease and Dermatitis Herpetiformis.

Are Thumann's products gluten free?

Thumann's meats, cheeses, condiments, and pickles are gluten free. With the single exception of Thumann's franks for deep frying. Thumann's is the first meat company certified gluten free by the Gluten Intolerance Group of North America. For a complete list of our gluten free certified products, log on to www.gfco.org. Soon Thumann's will display the gluten free certification logo (GF) on all of our fine products. We advise you to always check and read labels for specific ingredients that you may want to avoid. Many stores use our products in preparation of meals, entrees, or sandwiches with other ingredients produced by other manufacturers that are not gluten free certified.

If you are gluten intolerant, always request sanitation of the deli slicer prior to slicing Thumann's cold cuts to prevent cross contamination of products that may contain gluten or other allergens.

We do not recommend freezing our fresh, premium deli meats and cheeses. Freezing effects both taste and texture of our products. However, if you choose to freeze any of our premium products, be sure to always defrost them under refrigeration.

How do I cook Thumann's Oven Ready Breast of Turkey?

The Recommended Preparation Method
Prepare Breast from refrigerated state (28°-35° F). If frozen, do not thaw at room temperature. Thaw breast in original package; refrigerated for 24 hours for each 5 pounds of product OR in cold water cover and allow 50 minutes for each pound of product - change water every 30 minutes.

Conventional Oven Method
Leave breast in netting, place on steam table or roasting pan, cover with foil. Cook to internal temperature of 160°-165° F. To brown: uncover during the last 20-30 minutes. Allow breast to cool 1/2 hour before removing netting.

Frozen 5-6 hours 325° F
Defrosted 3 1/2 - 4 1/2 hours 325° F

Convection Oven Method
Leave breast in netting , place on a steam table pan, add 1-2 cups of liquid and cover with foil. Cook to internal temperature of 160°-165° F. Turn end to end midway through cooking time. Check for moisture, add more if necessary and recover. To brown: uncover during the last 20-30 minutes. Allow breast to cool 1/2 hour before removing netting.

Defrosted 3 1/2 - 4 1/2 hours 275° F

What are the heating instructions for Thumann's fully cooked ham?

All of Thumann's fully cooked smoked hams (including sliced spiral & bone-in party hams) should be re-heated as follows.

Oven Bake: Remove all packaging. Place in covered pan, put in pre-heated 325° F oven. Bake to internal temperature of 120° F (approx. 12 minutes per lb. ). For the last 30 minutes remove ham from oven carefully , rub with Thumann's ham glaze. Garnish with cloves and pineapple slices. Return to oven for 30 minutes. Do not overheat! You may serve cold for sandwiches.

What are the cooking instructions for Thumann's corned beef brisket?

Place meat in a pot of boiling water. Add twelve ounces of beer to water (optional). Bring water to a second boil then reduce to simmer. Simmer for up to three hours or until fork tender. Slice and serve with Thumann's Horseradish Mustard.

How do I cook Thumann's fully cooked Italian Sausages?

Thumann's Italian sausage are fully cooked. For best results, our sausages can be cooked in skillet, baking dish or on the grill. Pierce casing and brown on all sides to desired amount.
